Why do we temper chocolate?

It dries to a hard, shiny finish. You end up getting chocolate that doesn’t melt at room temperature, breaks with a nice snap instead of crumbling apart, white streaks do not appear on top of the chocolate and is perfect for coating candies. // Angela

oreo and caramel stuffed chocolate chip cookie bars

Made these yesterday for a boardgame night. Only change I made was instead of using caramel, I used dulche de leche. I don’t think it made a difference, all I know is everyone who ate it loved it :D
